Spinach, Bacon, Onion & Swiss Cheese Omelet

  • Ingredients are per omelet:
  • 2 large eggs
  • Salt and pepper to taste
  • 1/4 cup shredded Swiss cheese
  • 1 tablespoon crisply cooked crumbled bacon (or diced ham)
  • 1/3  cup finely chopped DOLE® Baby Spinach
  • 1 teaspoon finely chopped onion


  • Spray a small skillet with cooking spray.
  • Heat over medium heat.
  • Separate the eggs.
  • In a small bowl beat the egg yolks with a fork.
  • In another bowl, whisk the egg whites until fluffy.
  • Fold the yolks into the whites; season with salt and pepper.
  • Pour into prepared skillet.
  • Cook about 30 seconds.
  • With a spatula, lift the edges of egg mixture while tilting the pan to allow uncooked egg to cover pan.
  • Repeat as needed until just set, about 2 minutes more.
  • Place cheese, bacon, spinach and onion over half the omelet.
  • Gently fold omelet in half to cover filling.
  • Cook for 30 seconds or until cheese is melted and spinach is wilted.
  • Carefully slide onto a plate.
  • Serve.
