Light Caesar with Smoked Salmon Pita Pizza Triangles

  • 1 pkg. (10 oz.) DOLE® Light Caesar Salad Kit
  • 3 (6-inch) pita breads
  • 2 teaspoons olive oil
  • 1/2 cup thinly sliced red onion
  • 4 oz. sliced smoked salmon, divided into 3 portions
  • 2 tablespoons chopped fresh dill


  • Lightly brush one side of pita breads with oil. Sprinkle onion on each pita bread.
  • Bake at 400º F for 5 to 7 minutes or until pita crisps around edges.
  • Top each pita with salmon slices; sprinkle with dill. Return to oven until the salmon is warmed through, about 2 minutes. Cut pita pizzas into quarters.
  • Combine salad and croutons in large bowl. Add prepared dressing, and toss to coat.
  • Divide salad between 3 plates and arrange 4 pizza triangles over salad.
