Italian Orecchiette with Chopped Greens and Bacon

  • 8 oz. (227 g) uncooked Orecchiette pasta
  • 4 slices lean bacon
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 pkg. (10 oz. / 286 g) DOLE® Italienne Chop Chop Salade Kit
  • ½ teaspoon (2.5 mL) crushed red pepper flakes
  • Salt and pepper


  • Cook and drain the pasta according to package directions.
  • In a large skillet cook the bacon until crisp; drain on paper towels. Remove all but 1 tablespoon (15 mL) of the drippings from the skillet.
  • Add the onion and garlic; cook 3 minutes. Add the lettuces from the salad kit; cook 3 minutes or until wilted.
  •  Toss the freshly cooked pasta with the salad mixture and the dressing, sundried tomato and cheese packets from the kit.
  •  Season with crushed red pepper flakes, salt and pepper. Crumble the cooked bacon over top. Serve.
