Honey Dijon Salad with Roasted Sweet Potatoes, Pumpkin Seeds and Gruyere Cheese

  • 1 large DOLE® Sweet Potato, peeled and chopped into 1-inch cubes
  • Salt and ground black pepper, to taste
  • 1/2 teaspoon ground cinnamon
  • 1 pkg. (9.5 oz) DOLE® Sweet Kale Salade Kit
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons shredded Gruyere cheese


  • Preheat oven to 350°F.  Spray shallow baking pan with olive oil cooking spray.
  • Spread chopped sweet potato in prepared baking pan. Season with salt and pepper. Sprinkle with cinnamon. Roast 35 minutes or until tender and golden brown. Let cool 10 minutes.
  • Toss salad kit ingredients with roasted sweet potatoes, pumpkin seeds and Gruyere cheese.
