Greek Veggie Burger with Spinach Salad and Mint Yogurt Sauce

Ingredients

  • 2/3 cup nonfat plain Greek style yogurt, or other thick yogurt
  • 1 clove garlic, finely chopped
  • 2 tablespoons chopped fresh mint
  • 1/4 teaspoon salt
  • 4 veggie patties
  • 1/2 cup Feta cheese
  • 4 Pita breads
  • 4 thin slices sweet white onion
  • 2 cups DOLE Baby Spinach
  • 8 strawberry tomatoes, halved, or 1 beefsteak tomato cut into dice

Directions

  • Mix yogurt, garlic, mint, and salt in a small bowl; thin with water if needed.
  • Grill burgers on a lightly oiled grill, turning often until heated through, about 5 minutes.
  • Top with feta cheese and cook 1-2 minutes more.
  • Removed from grill and cut each patty in half.
  • Warm whole pita breads on the grill or in a skillet until soft and pliable, 10-15 seconds each side.
  • Lay pita breads flat on a clean surface; place patties in the center of each.
  • Fill with onion, spinach leaves, and tomatoes, distributing evenly between each pita.
  • Fold like a taco, and drizzle with yogurt sauce.
  • Serve with sliced cucumber and Greek olives on the side, if desired.
