Sausage, Spinach and Egg Burritos

Ingredients

  • 1 package (6 oz.) DOLE® Baby Spinach
  • 1 teaspoon water
  • 1 tablespoon butter or margarine
  • 6 eggs, well beaten
  • Salt and pepper, to taste
  • 1/2 pound breakfast sausage, cooked, crumbled and drained
  • 1/3 cup salsa
  • 6 (10-inch) flour tortillas, warmed
  • 1 cup (4 oz.) shredded Cheddar cheese

Directions

  • Cook spinach with water in covered dish on HIGH in microwave for 1-1/2 to 2 minutes or until just wilted.
  • Drain any liquid; reserve spinach.
  • Heat butter in large nonstick skillet over medium-low heat.
  • Add eggs and season with salt and pepper.
  • Cook, stirring frequently until eggs are cooked through.
  • Add drained spinach, cooked sausage, and salsa, stirring just to combine.
  • Equally divide egg mixture across warmed tortillas; sprinkle with cheese.
  • Fold in 2 sides and roll up.
  • Serve with sour cream, chopped cilantro and additional salsa, if desired.
