- 1 pkg. (5 oz.) DOLE® Baby Arugula with Spinach or other DOLE Salad Blend
- 4 hard-cooked eggs, quartered
- 4 Roma tomatoes, quartered
- 8 baby dill pickles, thinly slice and halved
- 1 cup Parmesan-flavored croutons
- Green Chile Honey Mustard Dressing (recipe below)
Green Chile Honey Mustard Dressing:
- Whisk together 1/3 cup light mayonnaise, 2 tablespoons honey, 1 tablespoon whole grain mustard, 1 tablespoon Dijon-style mustard, 1 tablespoon cider vinegar, 1 tablespoon chopped canned green chilies, chopped, 1/2 teaspoon ground cumin, until blended.
- Makes about 1/2 cup.
- Divide salad into four small salad bowls. Arrange remaining ingredients on salad.
- Toss with Green Chile Honey Mustard Dressing, to taste. Refrigerate any remaining dressing.
