Ingredients

  • 1 pkg. (5 oz.) DOLE® Baby Arugula with Spinach or other DOLE Salad Blend
  • 4 hard-cooked eggs, quartered
  • 4 Roma tomatoes, quartered
  • 8 baby dill pickles, thinly slice and halved
  • 1 cup Parmesan-flavored croutons
  • Green Chile Honey Mustard Dressing (recipe below)

Dressing

Green Chile Honey Mustard Dressing:
  • Whisk together 1/3 cup light mayonnaise, 2 tablespoons honey, 1 tablespoon whole grain mustard, 1 tablespoon Dijon-style mustard, 1 tablespoon cider vinegar, 1 tablespoon chopped canned green chilies, chopped, 1/2 teaspoon ground cumin, until blended.
  • Makes about 1/2 cup.

Directions

  • Divide salad into four small salad bowls. Arrange remaining ingredients on salad.
  • Toss with Green Chile Honey Mustard Dressing, to taste. Refrigerate any remaining dressing.
