4 oz. (113 g) part-skim mozzarella, cut into 1/2-inch (1.5 cm) cubes
3 tablespoons (42 g) chopped fresh basil, divided
Bottled Italian dressing, as needed
2 Italian sausage links
1 pkg. (12 oz. / 340 g) DOLE® Chop Chop Confetti Blend
1/2 cup (113 g) sliced mushrooms, chopped
1/4 cup (57 g) roasted red peppers, chopped
1/4 cup (57 g) pepperoncini, chopped
1/4 cup (57 g) pitted ripe olives, chopped
Salt and ground black pepper, to taste
Combine mozzarella and 1-1/2 tablespoons (22 g) basil in small bowl. Add Italian dressing to cover. Marinate at room temperature while assembling salad.
Grill sausages until completely cooked. When cool enough to handle, cut into bite size pieces. Combine salad, marinated mozzarella, sausage, remaining basil, mushrooms, peppers, pepperoncini, and olives. Toss with more Italian dressing, until coated as desired. Season with salt and pepper, to taste.
