Chopped Bacon and Blue Salad with French Blue Dressing

Ingredients

  • 1 pkg. (12 oz. / 340 g) DOLE® Chop Chop Confetti Blend
  • 3 strips bacon, crisply cooked and chopped
  • 1/2 cup (113 g) sweet onion, chopped
  • 1/3 cup (76 g) walnuts, toasted and chopped
  • 1/4 cup (57 g) crumbled blue cheese
  • French Blue Dressing (recipe below)
  • Salt and ground black pepper, to taste

Dressing

French Blue Dressing:
  • Combine 1/2 cup (125 mL) canola oil, 1/2 cup (113 g) roughly chopped onion, 1/3 cup (90 mL) ketchup, 1/4 cup (57 g) sugar, 1/4 cup (60 mL) apple cider vinegar, 2 tablespoons (30 mL) lemon juice, 1 clove garlic, and 1/2 teaspoon (2.5 mL) paprika in blender. Cover; blend until smooth. Stir in 1/3 cup (76 g) crumbled blue cheese. Season with salt and pepper, to taste. Makes about 2 cups (500 mL).

Directions

  • Combine salad, bacon, onion, walnuts, and blue cheese crumbles in large bowl. Toss with French Blue Dressing, until coated, as desired. Season with salt and pepper, to taste.
