1 pkg. (12 oz. / 340 g) DOLE® Chop Chop Confetti Blend
3 strips bacon, crisply cooked and chopped
1/2 cup (113 g) sweet onion, chopped
1/3 cup (76 g) walnuts, toasted and chopped
1/4 cup (57 g) crumbled blue cheese
French Blue Dressing (recipe below)
Salt and ground black pepper, to taste
French Blue Dressing:
Combine 1/2 cup (125 mL) canola oil, 1/2 cup (113 g) roughly chopped onion, 1/3 cup (90 mL) ketchup, 1/4 cup (57 g) sugar, 1/4 cup (60 mL) apple cider vinegar, 2 tablespoons (30 mL) lemon juice, 1 clove garlic, and 1/2 teaspoon (2.5 mL) paprika in blender. Cover; blend until smooth. Stir in 1/3 cup (76 g) crumbled blue cheese. Season with salt and pepper, to taste. Makes about 2 cups (500 mL).
Combine salad, bacon, onion, walnuts, and blue cheese crumbles in large bowl. Toss with French Blue Dressing, until coated, as desired. Season with salt and pepper, to taste.
