Ingredients

  • 1/3 cup red wine vinegar
  • 2 tablespoons water
  • 5 garlic cloves, finely minced
  • 1 pasteurized egg, or 1/4 egg substitute
  • 1 teaspoon salt
  • 1/2 teaspoon sugar
  • 1/2 teaspoon yellow mustard
  • 1/3 cup olive oil
  • 1/3 cup vegetable oil

Directions

  • Combine all ingredients except oils in blender. Cover; blend at medium speed.
  • Slowly add oils in thin stream, until blended.
  • Toss with DOLE® Arugula to coat, as desired.
  • Refrigerate any remaining dressing.
  • Makes about 1-1/2 cups.
